Food + Beverage Vendor Requirements

Food + Beverage is a highlight of our events, and we welcome all varieties of vendors – from coffee and sweets, to savory and spicy. Small batch purveyors to Food Trucks and Baristas ~ We’re always on the lookout for fresh, tasty, and creative offerings to keep our attendees and artists happy and healthy.
Requirements by City
The following materials are required of all food vendors to participate in Renegade Craft. Each city/venue has different requirements, so please read on to learn more about what's needed to participate in our events. Thank you!
All food + beverage vendors need to have a Certificate of General Liability Insurance, and list Renegade Craft Fair, Inc. as additionally insured. Our address is 420 W. Huron Street, Chicago, IL 60654. There may be additional insureds to add to your policy, noted below.
Safety at our events is paramount, and it is on the vendor to remain compliant according to the city guidelines below. Vendors who do not submit completed materials by the deadline provided once accepted won’t be able to participate in the event, and their booth fee will be refunded.
Food trucks must submit a gross sales report within two days after the event, and agree to have us charge the card on file for payment due. Thank you!
Spring/Summer Fairs in Andersonville & Wicker Park
PACKAGED GOODS
For food/drink sold in closed packaging, with or without sampling, the following materials are required:
- Chicago Department of Public Health Inspection Record -or- inspection record / sanitation certificate from the City/State where you reside.
CONCESSIONS
For food/drink requiring assembly or cooking onsite, the following materials are required:
- Copy of Temporary Special Event Food Single Event License -or- Copy of 180-day Special Event Food License obtained from the City of Chicago.
- Chicago Summer Festival Sanitation Certificate.
- The city requires that one person with the certificate be present at the event at all times.
- Chicago Department of Public Health Inspection Record -or- inspection record / sanitation certificate from the City/State where you reside.
- Diagram showing booth layout and location of gravity fed hand wash station. It is preferred that you have your own sink within your booth footprint, but if needed, one hand wash station will be provided at each concessions area of the fair, and pre-packaged vendors are permitted to use the concessions sink.
FOOD TRUCKS
- Copy of Temporary Special Event Food Single Event License -or- Copy of 180-day Special Event Food License obtained from the City of Chicago.

Fall/Winter Fair in West Loop
PACKAGED GOODS & CONCESSIONS
- Sanitation Certificate from licensed or approved kitchen or recent health inspection record where your product is produced and/or packaged.
FOOD TRUCKS
- Copy of Food Truck Permit or License.

We always need a new version of this for every LA fair. Physical permits will be distributed on-site.
Please note LA Public Health charges a fee for all Temporary Food Permits. See the fee breakdown here. Local permit fees are not included in Renegade Craft participation fees. This is an additional, separate fee that will be charged to your card on file post-event.

- Kitchen Sanitation Certificate
For the kitchen in which your products are produced, issued by your local government. Examples of approved documentation include:
- A Food Registration from the State Food and Drug Branch (FDB)
- A valid permit from a local environmental health agency
- A federal inspection certificate
- Agreement for Sharing of a Permitted Facility
Additional Notes & Resources
Food vendors are responsible for providing floor covering for booth spaces (tarp or similar) as well as a dedicated hand wash station (gravity fed/water container is fine).
Food vendors are responsible for providing some type of sidewalls on all sides of their tents with a pass-thru window on the serving or selling side. If no prep, sampling, or open packaging is present then this requirement is not necessary.

FOOD TRUCKS
- Copy of active Public Health Permit for your truck

- Temporary Food Service Establishment Permit (TFSE)
- Every vendor, including prepackaged, shelf stable products all need to obtain a TFSE, even if you do not plan on sampling.
- Food Protection Certificate
- Required no later than three weeks prior to event.
- Please see exceptions to the TFSE listed below.
CONCESSIONS & FOOD TRUCKS:
- TFSE and Food Protection Certificate, plus:
- Mobile Food Vendor’s License

*EXCEPTIONS to TFSE:
- A food service establishment (FSE) with a current, valid permit from the Health Department can operate one stand without a separate temporary food service establishment (TFSE) permit. A copy of the FSE permit must be available for inspection at all times.
- A Mobile food vending unit with a valid mobile food vending permit decal from the Health Department can operate in accordance with its permit, as long as the permit is valid in the borough where the event takes place.
*EXCEPTIONS to FPC:
- A food operation serving only non-hazardous, commercially pre-packaged foods (e.g. bottled water, canned beverages, bags of potato chips, prepackaged cookies) may:
- operate without a Food Protection Certificate holder present, but only after receiving a modification from the Health Department. However, the food operation must still have a TFSE permit.
Food protection certifications from other government jurisdictions and or certifying organizations (e.g. ServSafe) may be acceptable. TFSE permittees must contact the TFSE Inspection Program for approval.

PACKAGED GOODS & CONCESSIONS & FOOD TRUCKS:
- Temporary Food Event (TFE) – Food Vendor Application
- Copy of health department permit to operate -or- sellers permit that indicates your operation/business is a licensed food establishment or food service provider.
- Copy of current food safety manager training certificate for person in charge at the event
- Your certified food safety manager must be at the event at all times.

PACKAGED GOODS & CONCESSIONS
- Agreement for use of approved Commissary -or- Shared Kitchen Facility located within King County. If not in King County, please provide a kitchen sanitation certificate or recent health inspection record for the kitchen in which your products are produced.
PACKAGED (not sampling)
Vendors with food + beverages sold in closed packaging that will not be opened or sampled, the following materials are required:
- Temporary Minimal Food Service Application. Please note the fee. Application must be submitted to one of these Seattle locations, not to Renegade Craft:

Fully prepackaged shelf-stable products are exempt and permissible to offer small samples without this permit. If you are heating/cooling anything, or require refrigeration, you will need this permit. Everyone, regardless of whether or not this permit is required, will still need to provide a hand wash station within their booth.
CONCESSIONS & PACKAGED (sampling)
Vendors with food + beverages requiring assembly or cooking onsite, or food/bev sold in packaging that will be opened, handled, and sampled to customers, the following materials are required:
- Temporary Moderate or Complex Food Service Application. Please note the fee. Application must be submitted to one of these Seattle locations, not to Renegade Craft:
